TASTING NOTES

We proudly introduce a new vintage of our very popular “Champagne” style Rosé sparkling wine. This vintage is made from an organic bush vine Pinotage block planted in 1996. As far as we know it is the only organic Pinotage MCC rosé wine in South – Africa. Like all the other grapes on our farm this block is farmed organically and without any irrigation. Our area is world famous for Pinotage and hopefully this different style of the local variety will truly show what our terroir is all about. We pick the grapes for this wine usually in the last days of January. We pick a bit riper than other producers because of the high amount of malic acid in the indigenous Pinotage grape. Very careful whole bunch pressing is followed with only around 520 liters of juice extracted per ton of grapes. We do not use any finning agents in our (white) wines and therefore a very soft press is our only solution. The juice is treated with a selected enzyme and allowed to settle for 24 – 30 hours. After racking the juice is inoculated with EC 1118 for a primary fermentation. This will last around 14 days. The finished wine is then left on the sediment for 2 – 3 months before it is re – inoculated with a yeast “bomb” and then bottled under crown. The wine will spend 9 months (Legal South – African limit) under crown before it is disgorged and finally corked. Because of higher than normal pH and low acid levels we do not use high sugar content in our dosage. Beautiful light strawberry colour. On the nose lovely fruits with a bit of candy floss and red berries evident. W ell balance palate with good fruit and a soft lingering acidity. Medium size bubbles with a well-structured “mouse”. A wine to complement any occasion.
