TASTING NOTES

A new release of one of our favourite summer wines. This is a wine we make already for some time and is very popular. We are sure the new vintage will continue the trend. It is a combination of five grape varieties, each block individually selected and picked for Rosé making. We like our Rosé light and fresh with moderate alcohol and a light refreshing colour.

All grapes are grown organically in four different “terroirs” in the Western Cape. We pick everything by hand and if possible chill it at cellar arrival. After destemming we do not give any skin contact at all and as quickly as the press is filled we will start pressing. A soft press with around 530 liters per ton to yield very good light juice free of phenol or colour will take around two hours. We use enzymes for settling 24 hours after which the clean juice is racked and inoculated with a selected yeast strain for a cold slow fermentation. The wine is bottled sterile in May.

Lovely salmon like colour. Lots of fruit on the nose with berry and cherry flavours evident. On the palate oodles of fruit and complexity. Medium bodied with good juiciness and balance. A great glass of wine to be enjoyed on its own or will complement some summer salad and fish.
