TASTING NOTES

A new release of our popular Rosé wine. The grapes for this wine are organically grown in several areas in the Western Cape. It is a blend of up to 5 varietals but we like to keep it a secret. We pick the grapes as you would for a white wine and we do not “bleed” red wine juice to make this wine. We are looking for low alcohol and freshness and a lovely light colour and this you can only get if you pick the reds at a lower degree of ripeness. Grapes arrived at our cellar from around the 22nd of January this year. It was a hot and very dry year and careful planning and actions were needed to preserve the freshness and flavour of the grapes. After a very soft destemming and crushing no skin contact was given and we immediately separated the juice and skin to almost make a very pale red wine. You can always add colour but it is very difficult to take colour out. We settle the juice for 24 hours with enzymes and at very low temperatures. Careful reductive racking followed and each batch was inoculated with preferred yeast. Fermentation temperatures were lower that what you expect in our cellar and lasted 14 – 18 days. The wine was left on the primary lees for 1 month before being filtered sterile into bottle. Beautiful refreshing colour. The nose is packed with berries and wild spices. The palate is light and refreshing with some black currant and almost limey acidity working perfectly in harmony. A wine to enjoy with friends on the patio, but also with enough complexity to complement light summer dishes.
