TASTING NOTES

This is our second effort in producing a lovely easy drinking Organic Rosé. The vintage 2016 was a very dry vintage with super concentrated berries which added to the quality of this wine. The grapes for this wine are a secret and are grown organically in four different wine areas in South–Africa. First pickings started already from the 20th of January and continued to middle February. All the grapes were handpicked and chilled over night before a gentle destemming and pressing took place in a modern 3 ton press. A very short skin contact was given to extract sufficient colour. We do not want it too dark and we also do not use any bleeding or “saignee” to make our Rose wines. We pick earlier and work reductively to get fresh fruit and low alcohol in perfect harmony. After pressing the juice did settle with enzymes for 24–36 hours. Careful, modern, reductive racking followed and the juice was inoculated with a commercial yeast strain. Fermentation was done at low temperatures and took 14–20 days to finish. We do not add any fining agents to our wines and the wine was bottled with minimum sulfur at bottling. Lovely, fresh, light colour. On the nose hints of berries and wild Cape “fynbos”. The palate is perfectly balanced with a good natural acidity and a kind of juicy minerality that adds to the complexity of this wine. A lovely lifestyle wine to complement salads and seafood with friends.
