TASTING NOTES

Grapes are bought in from a very high altitude vineyard in the Agter Witzenberg area near Ceres. The grapes have become so popular in this famous apple area that you cannot get hold of any of it.

Grapes were handpicked and left in a cold room overnight. Destemming the next day, with sorting, after destemmer but before crusher. 15 % Whole bunches were included and fermentation took place at low temperatures, peaking around 20 degrees. Only one punch down per day was done and the wine was in contact with skins for around 20 days.

After pressing the wine was aged in very old French oak barrels for 12 months. No finning took place and the wine was lightly filtered at bottling.

Light colour, very typical for Pinot Noir. On the nose some forest floor, mushroom and sour cherry flavours well complimented with a good medium bodied structure. Enjoy 3 – 5 years after harvest.
