TASTING NOTES

A new vintage of our very popular Natural Sweet. This wine is made only in some vintages and the volumes are extremely small not even reaching 1000 liters per year. It is a wine that started out in 2001. It is always made from thesame block of very old Chenin Blanc. The block was planted in the early 1970’s, and by accident also contains some Riesling, Semillon and Sauvignon Blanc plants among the Chenin, it is unirrigated and is grown without trellising. Yields are extremely low which add to the concentration of thejuice. We do not want any botrytis in the grapes for this wine. We pick the grapes very ripe with sugars reaching around 28–30 Balling. We handpick and do everything whole bunch pressing. Enzymes are used for settling and we usually wait around 24 hours before it is racked reductively. The juice is inoculated with weak industrial yeast and fermentation is cold and very slow. We stop the fermentation at around 7% alcohol when we feel that sugar acid ratio is at its best. This is done with sulfur, cooling and filtering. The wine is then bottled as soon as possible with a sterile filtration. Fresh, vibrant colour. Pineapple and tropical flavours on the nose. The palate is fresh and vibrant with a sweet-sour sensation. What you smell and taste is completely different and I can guarantee you that this style of wine is very unique for South–Africa. A wine to be enjoyed with rich oily dishes like duck liver and patés.
