TASTING NOTES

Another fine release of our super Single Vineyard Cabernet Sauvignon. This is a wine we have made since 2005 but this is only the 4th release. It is a very limited bottling with less than 2000 bottles produced in this vintage. The name comes from a recommendation made by a Widow to plant Cabernet on this specific spot on the farm. This was the first new block planted in 1994 and we use only the top part of the block, which is a special clone, to make this top quality Simonsberg – Stellenbosch Cabernet. This block, also referred to as block 1 is our top quality block since many years. The grapes are handpicked, destemmed and followed by careful sorting and only then crushed. 30% Whole berries are used to enhance fruit and the mash is carefully moved to a 5 ton open fermentation vessel. The grapes are inoculated with a secret Laibach yeast that we have used on this block since 2001. Fermentation will last 5–7 days with regular manual punch downs and pump overs to extract tannin and colour. The amount of punch downs will depend on the characteristics of the vintage. Malolactic takes place in stainless and the wine is matured in 100% new French oak barrels from Francois Freres and Seguin Moreau. Deep dark colour. Fantastic nose with lots of “cassis”, cigar box and some rose petal evident. Full bodied with lots of structure and complexity. Good dollops of expensive oak very much evident at this stage but hints of wild spice and blackcurrant already evident. An absolutely classic Cabernet Sauvignon from our very special Simonsberg – Stellenbosch terroir. A wine that will be best enjoyed 4 -10 years after the harvest.
