Vintage 2005 was an outstanding vintage for our estate. It was the first vintage that we hand sorted all the red grapes that came into the cellar with a modern “vibrating table”. This helped us to get rid of all the unwanted green herbaceous material the destemmer can not get out. This also helped us to pick at lower sugar levels and get more varietal character with less alcohol. We only do 1 ton per hour and all batches are fermented separately in small 5 ton open fermentation stainless steel tanks. All varietals are treated differently to enhance varietal character and then blended just before bottling. This wine is a great example of the art of blending. The grapes are hand harvested in small lots. Destemmed, sorted and then crushed and moved into fermentation vessel. A warm fermentation follows and tannins, flavour and colour is extracted with manual punch downs every 4 hours. Pressing is done after 6–10 days on the skins and all the wine is aged in older French oak barrels for 12–14 months. Blended and lightly filtered just before bottling. Medium color with hints of leather, black currant and some cigar box notes on the nose. Good definition of complexity on the palate with meat and crushed berries in abundance. A medium bodied wine with lovely savoury freshness and a good firm acidity. Drink now, but with the potential to develop with further aging.
