After a skipped vintage 2017, our popular Chenin Blanc is back. Made from old Bush vine grapes, this wine is fun and cheerful. We selected 2 vineyards this year, one in Stellenbosch and added a block from Paarl. Volumes are not very big this year because of the drought and therefore we could only manage a very small bottling.
We pick everything by hand and then we destem. Grapes should be in the cellar by noon. After destemming we allow some extended maceration before a very gentle press. We do not use enzymes for settling and allow natural gravity to do the job for us. After 36 hours we rack reductively and we add yeast to help us with 15 – 16 degree fermentation. This will take 2 – 3 weeks. We do not use fining agents and the wine is bottled with a sterile filtration in autumn.
Light refreshing colour. What you see is what you get. Some white peach, green apple and tropical pineapple. The palate is fresh and light with a good natural acidity and no residual sugar. A very refreshing glass of wine with great acidity and a lingering fruity finish. Enjoy now till 2 years after bottling.
