This wine is made from one specific block on the farm. It was planted in 1996 and is half trellised and the rest is bush vine. This block produces as well our grapes for our Methode Cap Classique Rosé bubbly. It is farmed and certified organic and no irrigation is used at all. The block is situated at the highest point on the farm and does get quite a bit of wind and sun to naturally reduce the crop. We try to pick this block in 2 different stages, the one usually a bit riper than the other one. Harvesting is done as early as possible in the mornings to get some nice cool grapes into the winery. Pinotage is such a thick skin grape in our area that we need to crush, but we avoid going through the mash cooler otherwise we will get too much colour and some bitter tannin. The juice is allowed to settle for 24–48 hours after it is racked reductively and inoculated with yeast. We try to make the wine as white as possible and we treat it very much like a modern new world white wine. A very small percentage of red wine will be added before bottling to get our colour. Lovely refreshing colour. Lots of fruit on the nose with some strawberry, wild berry and candy floss evident. Fantastic freshness on the palate with lots of delicious juicy fruits, beautifully balanced by an almost creamy acidity. A wine for summer, but with enough characteristic to complement sushi and seafood dishes. Enjoy!
