We first produced this wine in 2005. It was only about 2 barrels but since, volumes increased quite a bit. The wine is still Chardonnay dominated but with less wood and also less Viognier in the final blend. The wine is still great fun to make. It seems like everything they teach you in wine school you just deliberately try to do the opposite. This very much fits in with our creative, sometimes crazy style of organic winemaking. The new vintage is much fresher than some of the previous ones with less alcohol and less residual sugar. There are absolutely no new barrels involved at all with this vintage. About 25% of the wine is matured in old 500 liter Hungarian oak barrels. When I say old I mean old. We pick everything by hand and most of the grapes are whole bunch pressed with a top of the range bag press. We also did some fermentation on the skins like our normal red wine with one punch down per day. Fermentation is all done naturally and no acid or sulfur is added. We do not use any enzymes or any finning agents like gelatin, casein etc. Our Ladybird White is Vegan friendly. Grapes for this wine are grown in several terroirs around the Cape which adds to the complexity of the final wine, it is certified organic. Lovely light, straw colour. On the nose lots of tropical fruits with some white peach evident. The medium bodied palate is packed with fruits and the well balanced acidity adds a juicy, but fresh finish. The wood is very well integrated and adds complexity and dimensions to the popular wine. A wine that will complement chicken, salads and pasta dishes.
