One of our favourite and best known wines has always been Merlot. We consistently produce one of the best examples of this variety in South Africa. This is a new release of the brilliant 2015 vintage. Made from younger organic vineyards grown on our farm, this is just again to show the world what Merlot in South Africa is all about and how we blend good terroir and spot on winemaking to produce something special.
The grapes are handpicked and cooled overnight. We do destemming before a very slow and precise sorting to get rid of all unwanted green stems. This we do around 1.5 tons per hour and we believe this is very important for this tough grape varietal. In this vintage we did do a bit of cold soak beforehand, but we did not inoculate with yeast. Everything natural. Fermentation lasted around 12-14 days and a bit of extended maceration after fermentation was done. After gentle pressing the wine was matured for twelve months in older french oak barrels.
Deep dark colour. mint and chocolate on the nose with wild spice and some liquorice evident. medium bodied palate with good silky tannins and an array of fresh crushed berries. Good balance of wood and tannins with enough structure and complexity to keep 3 - 5 years at least. A wine that can be drunken young, but would benefit from further ageing. Serve with red meat and pasta dishes.
